As head chef and founder of The Black Swan in Oldstead, Tommy became the youngest Michelin starred chef in the UK in 2013 through his passion and dedication. Using only local ingredients foraged from the surrounding Yorkshire countryside and grown on his family farm, the Oldstead produce is the cornerstone of his cooking and the root of his success.
